Cherry Pudding Recipe

(Joann’s Mom’s family recipe)

This is more like an unsweetened, dense cake, served with a sweet sauce, somewhat different than what we often think of as “pudding”.

Combine in a large bowl:
1 egg
1 cup half-and-half
1 teaspoon vanilla

Stir together, then add to large bowl and mix well:
1 1/2 cups flour
1/8 teaspoon salt
2 teaspoons baking powder

Add to large bowl, folding in:
2 cups pitted sweet cherries (light or dark sweets or a combination).

Pour batter into greased 8″ by 8″ pan and bake in preheated oven- 30 minutes at 375 degrees F, or about 45 minutes at 350 degrees F, until lightly browned and toothpick inserted in middle comes out clean.Serve with topping: 1 cup brown sugar mixed with 1/3 cup unwhipped whipping cream.
